Heirloom Early Blood Turnip Beet is one of the oldest known heirloom beets, it was in American seed catalogs by 1820.  Both the root and the greens are edible.  The 4" - 4 1/2" round root of Heirloom Early Blood Turnip Beet is a deep dark violet red with lighter zoning.  They can be preserved using traditional canning methods.  The tops can be sauteed, steam or boiled as you would spinach. The greens of Early Blood Turnip Beet are deep green with a red cast and red stems and veining. They are beautiful in salads.  When harvested young, Early Blood Turnip Beet are so tender and tasty they can be eaten raw. The beetroot is wonderful steamed and peeled with just a bit of butter.
