Borage Herb Seeds. Borage Herb (Borago officinalis) This heirloom herb is an annual that self seeds if you allow it. Heirloom Borage is also known as Starflower because of the shape of it's flowers. The five pointed flowers of Heirloom Borage are a primarily cornflower blue color but sometimes a pink blossom will show up. The Borage plant grows 2 to 3 feet tall with fine hairs on the stems and leaves. Use Heirloom Borage leaves fresh to add a cucumber like zip to your salads. Many use Borage Herb to make a refreshing cool summer drink.  Heirloom Borage flowers have a flavor similar to honey and are used as a garnish.  Some gardeners plant Borage in their gardens to attract pollinating bees which also makes it a good honey plant. Borage is also used as a companion plant for Tomatoes, squash and plants in the cabbage and broccoli family. Medicinally, Borage has anti-inflammatory properties. Heirloom Borage is sometimes used in Naturopathy Medicine to alleviate and treat colds, bronchitis, and respiratory infections. Borage is now widely cultivated for the seed oil. Borage is the highest known plant-based source of gamma-linolenic acid. Borage also contains the fatty acids palmitic acid, stearic acid, oleic acid, linoleic acid.
