Flor de Mayo Bean Seeds. This beautiful heirloom pink bean is native to the Southwestern most part of the United States and Mexico.  When the beans of Flor de Mayo are harvested they are a beautiful pink color.  As the harvested bean dries more they will change to a pink-taupe color.  The plant has a bush runner habit similar to the Pinto Bean.  Harvest Flor de Mayo as fresh shell beans or let fully mature for a dry bean. Flor de Mayo Bean have an almost smokey flavor and a rich, smooth texture.  They are paired well with chilis in Southwest dishes. 65 - 70 days until harvest for fresh beans, or 80 - 90 days until harvest for dry beans.
