Kale is also a powerful antioxidant.  Kale along with other members of the brassicas family, contains sulforaphane. Sulforaphane is believed to have strong anti-cancer properties. Members of the brassicas are also a source of indole-3-carbinol which boosts DNA repair in cells and appears to block the growth of cancer cells. Kale is considered to be anti-inflammatory. Kale also contains carotenoids and calcium. Being a member of the cabbage family the flavor of course is similar to cabbage. Kale can be eaten fresh - as in salads, steamed, stir fried, boiled or incorperated into other dishes.
