Arikara Yellow Bean Seeds. Heirloom Arikara Yellow Beans are native to North America and were cultivated by the Arikara tribe of the Dakota territory. Being native to the Missouri Valley Region Heirloom Arikara Yellow Bean are a very short season cold hardy bean plant that has drought resistance. This Native American heirloom was identified as one of the beans that helped sustain the Lewis and Clark expedition in the winter of 1805. Lewis and Clark brought Heirloom Arikara Yellow Bean Seeds back from their expedition to Thomas Jefferson and he planted them in his gardens at Monticello.  The bush plants produce an abundant amount of pods containing small beans that are yellow to yellow pink when first shelled. As Arikara Yellow Beans dry they turn a yellow tan color.  Like almost any bean you can harvest Arikara Yellow early and cook as fresh snap green beans, but they are much better utilized as a shell bean or a dry bean. Arikara Yellow Bean are perfect used as a dry bean in dishes such as baked beans or soups because of their creamy texture.  Approximately 50 days until harvest for green snap beans, 60 - 65 days until harvest for fresh beans, or 75 days until harvest for dry beans.
