There Amaranth is referred to as Cheera and the young leaves are stir-fried with red chilis and spices.  Heirloom Kerala Red Amaranth is a hardy plant that easily grows 3 feet tall with little care. The height of your plants will vary with the care given, soil and climate. The stalk, stems and entire leaves of Heirloom Kerala Red Amaranth are an extremely deep red. The seed heads are also the same deep shade of red. This is a very ornamental plant that works great as a backdrop in a flower bed as well as working to provide food for your family. The leaves of Heirloom Kerala Red Amaranth can be cooked as tasty greens, stir fried, sauteed or boiled. Flavor is similar to collards with a slight tang. Harvest the greens at desired size leaving the main stem to keep producing foliage and then grain. The grain can be harvested as you would other Amaranth Grain.
