The word Amaranth comes from Greek meaning "everlasting" referring to the never fading flowers. The amaranth plant is an annual herb, not a true grain and is a relative of lamb’s-quarters. Amaranth grain can be used as a cooked cereal, ground into flour, popped like popcorn, sprouted seed, or toasted. The leaves of amaranth can be cooked and used as greens. The amaranth grain can be added to stir-fry or to soups and stews and can be used as a nutritional replacement for thickening agents like corn starch.  Amaranth is a gluten free grain that contains more protein than wheat or oats. Amaranth grain also contains more protein than any other gluten free grain. The type of proteins contained in amaranth grain are very soluble which make them easier to digest. Amaranth grain is higher is lysine, calcium, magnesium, iron and fiber than most other gluten free grains. The amaranth grain like most other grains can be fermented to make beer.
