This plant is an edible ornamental. The vines are covered with beautiful flowers that attract large amounts of birds and butterflies. They can be used as a snap bean, shell bean or dry bean. The green pods are edible whole but best when harvested at 4" - 6" as they tend to become fibrous as they mature. The purple beans can be cooked fresh or as dried beans. Ayocote Morado Purple Runner Beans are a rich deep purple color like most colored beans they change color when cooked. The flowers of Ayocote Morado Purple Runner Bean can be eaten fresh, added to salads they impart a beany flavor. Can be a perennial plant as it grows differently than other bean varieties and produces a tuberous root. The starchy roots can be prepared and eaten as you would Jerusalem Artichokes.
