Heirloom Ayocote Morado Purple Runner Bean Vegetable Seed

Ayocote Morado Purple Runner Bean. WOW would be one word to describe this bean. This heirloom bean is native to North and Central America and grows on long healthy vines that can reach over 10' tall. This plant is an edible ornamental. The vines are covered with beautiful flowers that attract large amounts of birds and butterflies. They can be used as a snap bean, shell bean or dry bean. The green pods are edible whole but best when harvested at 4" - 6" as they tend to become fibrous as they mature. The purple beans can be cooked fresh or as dried beans. Ayocote Morado Purple Runner Beans are a rich deep purple color like most colored beans they change color when cooked. The flowers of Ayocote Morado Purple Runner Bean can be eaten fresh, added to salads they impart a beany flavor. Can be a perennial plant as it grows differently than other bean varieties and produces a tuberous root. The starchy roots can be prepared and eaten as you would Jerusalem Artichokes. For dry beans, pods are ready to pick when they are mature and dried down. 80 days until full maturity for dry bean. Packet contains approximately 25 seeds grown naturally with love and care.
